West Ham season ticket holder Mark Gevaux, better known as the Rib Man for his succulent baby-back pork-rib meat stuffed into floury buns and topped with a lava-like splodge of his own hot sauce has moved to Stratford ahead of West Ham’s move to the Olympic Stadium.
Nicknamed the “godfather of street food”, Gevaux spent three seasons serving his famous ribs to West Ham fans from a pop up table outside the Boleyn Tavern on the corner of Green street and Barking road.
He describes his slow cooked pork as the best ribs in London and he also has a stall in Brick Lane.
Speaking to Claret and Hugh Mark revealed “I have moved into Truman’s brewery on fish island – its right behind the Olympic Stadium and we will be doing memberships – that’s on top of me trying to get into the stadium”
The Ribman has already met with Olympic Stadium American caterers, Delaware North in the hope his famous ribs can be served inside the Stadium nest season but he is not leaving anything to chance by moving half a mile away from the former Olympic Stadium in Stratford.
